once upon a time, i got the treat of visiting my friend crystal's family for a few days in pennsylvania on my way home from spending the summer at camp shiloh. crystal's family lives in lancaster county, near the amish community.this summer as i read beverly lewis' amish novels (which i highly recommend) i could picture the setting much better thanks to that trip many years before. but my favorite part of the time spent in lancaster county, was the morning the rodgers took me to a bakery for breakfast and i first tasted the deliciousness of baked oatmeal.
i must have oohed and aahed about it quite a bit, because crystal's mom found a recipe to share with me. every so often i come across the recipe in my box and am reminded how much i love it as i whip up a batch.
and as pregnancy has a funny way of doing, i get stuck on certain recipes and want to make them all the time. that is the case with baked oatmeal (or as adelaide calls it "eat-meal") this month. it's almost like eating an oatmeal cookie for breakfast!
BAKED OATMEAL
2 eggs
1/2C oil
1t vanilla
1C milk
1C sugar
3C oatmeal (uncooked oats)
1t salt
1t baking powder
1) preheat oven to 350 degrees F.
2) in a mixing bowl mix eggs, oil, vanilla, milk, and sugar.
3) add in oatmeal, salt, and baking powder.
4) pour the mixture in a 8x8 greased pan.
5) bake for 30 minutes.
i usually eat a couple of servings straight out of the oven while it is still hot!
then i cover the pan with foil and put the rest in the fridge to store.
for breakfast the next few mornings, i scoop out a serving into a bowl, add a little milk, and reheat it in the microwave.
i like to top mine with chopped pecans or walnuts.
adelaide likes hers with golden raisins.

Hey Annalee! So, I've been making this every week since you posted this. YUMM-O! I just lower the sugar by a bit, and I added a bit of cinnamon while experimenting with it. Anyway, thanks for sharing this. I will eat it OFTEN and will think of you when I do. Btw, I love it w/ pecans too :)
