the fresh okra at the grocery store looked so good it jumped in my cart.
after i got home i remembered i don't even know how
to make the fried okra i was dreaming about,
so we improvised with what was already in the pantry.
it turned out too good (and too easy) not to share.
INGREDIENTS:
okra
bread crumbs (or cornmeal)
salt & pepper
olive oil
DIRECTIONS:
heat a little olive oil in a skillet over medium heat.
rinse the okra and chop into small pieces.
toss in bread crumbs or cornmeal.
season with salt & pepper.
cook in olive oil until done.
this recipe has been tasted and approved by all ages in our family.
