GREEN. IT'S WHAT'S FOR DINNER, AND DESSERT...

a sandwich with a side of baked cheetos. now that's what i call dinner.

CHICKEN FLORENTINE PANINI
(another great recipe courtesy of megan)
serves 4

1 can refrigerated pizza dough
9 oz. package frozen spinach
1/4C mayonaise (light if you want)
2 cloves garlic, minced
1/2 onion, chopped
1T olive oil
1T sugar
1T balsamic vinegar
1 can chicken (drained)
1/2 t italian seasoning
2-3 slices of provolone

unroll pizza dough and press to edges of 15x10x1 pan.
bake at 375 degrees F for 10 minutes, then let cool.
cook spinach and squeeze dry.
combine mayo and 1 clove garlic together, then refrigerate.
heat oil in pan and saute onion for 2-3 minutes.
stir in sugar and vinegar.
simmer 2-3 more minutes or until moist liquid has evaporated.
add 1 clove garlic, seasoning, chicken, and spinach.
cut pizza crust into 4 rectangles.
spread mayo mixture on each.
top 2 with chicken mixture and cheese.
put the remaining pizza crust pieces on top to make sanwiches.
heat skillet and place sandwiches in pan.
smash sides together and heat until crispy.
cut into quarters and serve hot.

and for dessert try these.
how could a recipe consisting of butter, sugar, and flour not be delicious?

SHAMROCK SHORTBREAD

1 1/2C butter
3/4C sugar
3 1/2C all-purpose flour

cream butter and sugar thoroughly.
add flour gradually (one cup at a time).
mix until well blended, but do not overmix.
roll into one-inch balls.
place on ungreased cookie sheet.
stamp with a cookie press or press down with the bottom of a glass or jar.
bake at 325 degrees F for 15-20 minutes.

have an extra serving of green from my favorite leprechaun.

happy st. patrick's day to you!

She is just too beautiful for words. I'm praying that little girl gets to running around soon! (I don't know that I've ever said that about a baby before. Mobility is scary :) )

Also I wanted you to know that we are praying for little girl! I know things like that can be scary.
Hope to have a playdate soon!

The shamrock shortbread (love the alliteration) will be our dessert next year for sure! Now I just need a shamrock cookie press. (:
